Autumn is officially here. Sky is gray most of the
time, it is raining almost every day here and all these are creating a sense of
sweet melancholy which I love.
These muffins, I believe go well with this Autumn
feeling and of course a cup of hot coffee.
Rum &
raisins muffins
2 cups (280 gr) flour
6 tbs (72 gr) sugar
55 gr (1/4 cup) melted butter
1 egg
2 ts baking powder
½ ts salt
1 ts cinnamon
½ ts ginger
¼ ts cloves
½ ts cardamom
½ cup orange juice
½ cup milk
½ cup (120 ml) rum
1 cup (155g) raisins
Soak the raisins in the rum overnight.
Preheat the oven
to 200°C/ 390°F. Line 14
muffin pans with paper or silicone cases. Combine the flour, baking
powder, sugar, salt and spices (all the dry ingredients), in a bowl. Set
aside. In a smaller bowl whisk the egg, juice and milk. Pour the rum and raisins in the flour mixture and
combine .Make a well in the center of the dry ingredients and pour in the egg
mixture. Mix until incorporated. Fill the muffin pans until ¾ full .Bake in the
middle of the oven until golden 20-22 minutes and cooked when tasted with a skewer.
