Lemon Blondies




Valentine's day is pretty close and stores are all red and full of hearts and valentine gifts. Even if I don't really consider it as a real holiday, it is always fun to celebrate love <3 and a good excuse to bake.
This recipe is not in the valentine's spirit it is for those people that life gave them lemons. They are a ray of sunshine in the cold winter. So, I was craving something lemony the last days and I found this recipe. These blondies are delicious, especially for people that like lemons (obviously) and sweet and sour tastes. I think they are also great without the glaze; they have a nice balance. Perfect for your afternoon tea.



Lemon Blondies

150g (¾ cup) sugar
110 g (½ cup) butter
105 g (¾ cup) flour
2 large eggs
1 teaspoon vanilla sugar
2 tablespoons juice from a lemon
zest from 1 ½ lemon
pinch of salt

For the glaze
105 g (¾ cup) icing sugar
3 tablespoons juice from a lemon
zest from ½ lemon


Preheat your oven to 180°C/ 350° F. Line a 20x20 cm / 8x8 in pan with foil and grease the foil. Place the sugar and butter in a bowl and beat until fluffy. Add eggs one at a time, beating well after each addition. Add salt, zest, lemon juice and vanilla sugar and beat until combined and finally add the flour and beat just until combined. Pour the batter into prepared pan. Bake in the middle of the oven for about 25 minutes or until the sides are slightly brown and an inserted toothpick comes out clean.
While the blondies are in the oven prepare the glaze. Mix all the glaze ingredients with a spoon until it becomes a smooth mixture. Pour the glaze on the blondies just after they come out of the oven. Let it cool completely to remove it form the pan and cut in squares. Makes 16 squares.
