The December Daring Bakers' Challenge had us all cheering - the lovely and talented Bourbonnatrix of Bourbonnatrix Bakes was our hostess and challenged us to make fun, delicious and creative whoopie pies! Delicious little cake-like cookies sandwiching luscious filling in any flavors we chose... What else is there to say but "Whoopie!"
So this month we had to make whoopie pies. I always wanted to try them but never had. I made them for Christmas this year and I think they were amazing. I decided to make red velvet whoopie pies with cream cheese buttercream and decorate them with snowflakes. Well, except the color that with a little imagination turned out to be ¨reddish¨, the whoopie pies were very soft and tasty and I will definitely try to make different kinds of them. I didn't have any difficulties with the recipe, it was very easy to make and fun. I tried a recipe from Joy of Baking where it says that if you don't use Dutch process cocoa they will not become red red. So, because I cannot find it here I used the regular unsweetened cocoa and I tried with some paste colour and with some liquid colour but no luck. Also, I used a pretty big ice cream scoop and the whoopie pies became pretty big too.
The only thing I changed from the recipe was the cream cheese filling. The recipe said 3 cups of icing sugar but when I had put 1.5 it was already too sweet so, I decided not to put more since the consistency was exactly how I wanted it to be.
The result was 13 and a half big and delicious whoopie pies.
You can find the recipe for the whoopie pies here.
Your whoopies look great! Love the little snow flakes on them too! Thanks for playing along this month :)
