Caramel Cookies (kolakakor)





Christmas is almost here and I am in a holiday baking fever. So, today let’s start with something very quick and easy to make but also delicious. It is a Swedish recipe or I think so, because I have only eaten them here in Sweden. I like the buttery taste of these cookies with the hint of caramel from the golden syrup and their texture. They are perfect with a nice hot cup of coffee and you only need about 15 minutes to make them, baking time included.



Caramel Cookies (kolakakor)


100 g (1/2 cup) butter in room temperature
100 ml  (1/2 cup) muscovado sugar
200 ml (1 cup) flour
2 tablespoons golden syrup
1 teaspoon baking powder
1 tablespoon vanilla sugar or 1 teaspoon vanilla extract
1 teaspoon ginger (optional)

Preheat the oven to 175 o C/ 345 o F.  Line a cookie sheet with baking paper. Put all the ingredients in a bowl and mix them to form a dough. Work it a little with your hands until it comes together.  Then, divide it in two halves and form two rolls on the prepared cookie sheet. Don’t put them close to each other because they spread.  Press the rolls with your fingers or a fork and bake for 10-12 minutes. Take them out of the oven and immediately cut them diagonally in 1- 1.5 cm pieces. Let them cool completely. Makes about 30 cookies.
